			<content:encoded><![CDATA[<p>The salmon is an awesome fish to cook with and can be served in a variety ways and with a number of white wines. The fact of the matter is that the salmon can be purchased in a variety of ways. Of course, a cook can purchase the entire fish that has not been cleaned. There is also the full length fillet. A cook could also get salmon steaks, which have been cut cross ways through the fishes body. There is also smoked salmon, but if you are looking for cooking instructions then chances are that you have not gotten a smoked salmon.</p>
<p>The most common way to purchase <a href="http://busycooks.about.com/od/startwithseries/a/salmonfiletstea.htm" target="_blank">salmon is the fillet</a>. This is a cross cut fillet about one inch thick at the thickest point. One of the best things about <a href="http://wineportfolio.org/wp-content/uploads/2011/11/salmon.jpg"><img src="http://wineportfolio.org/wp-content/uploads/2011/11/salmon.jpg" alt="" title="salmon" width="225" height="225" class="alignright size-full wp-image-56" /></a>the fillet of salmon is the fact that it is boneless. This means you can less time in preparation and more time in the actually cooking process. Today we are going to talk about two processes that you can use together in <a href="http://www.all-about-cooking.com/salmon/" target="_blank">cooking salmon.</a></p>
<p>The first is a marinade which will add additional flavor to the fillets and additional moisture as well. Most marinades begin with oil and vinegar. The oil coats what you are marinading while the vinegar slightly cooks the meat a little bit. To this we will add some ginger for a little kick. In addition we are going to add dill, thyme and rosemary. Some people may prefer to replace the ginger with garlic. Try it different ways and see which you like best.</p>
<p>The salmon can be left in the marinade anywhere from an hour to 24 hours. The longer it stays in the marinade, the more flavor it is going to pick up. At this point you could cook the salmon using any of the traditional methods, the marinade has slightly cooked the fish and it is ready for what ever you have in store. Today we are going to use a combination of two methods.</p>
<p>Prepare a baking dish by lining it with aluminum foil. Form the foil around the contours of the dish so that it forms as deep a bowl as possible. Cut lemon quarters and make a layer in the foil. Add to this more dill and thyme. Preheat the oven to 300 degrees and set the baking dish to the side.</p>
<p>Get a non-stick skillet and get it as hot as you can with your stove. Leave the empty pan on high until you know that it is good and hot. Make sure that it is non-stick and if you have doubts then use cooking spray. If you are cooking multiple fillets the next process should be done one fillet at a time as they will not be in the pan for long.</p>
<p>Making sure your non-stick surface is ready, put the fillets one at a time on the pan for about two seconds per side. Each fillet should take less than twenty or thirty seconds in the pan. The idea is to just sear each side quickly. This ensures that the flavors in the fish stay in the fish as it cooks.</p>
<p>After each fillet is seared, line them up in the foil lined pan. If you want you can pour some of the marinade over the fish, but not a lot. You do not want the fish sitting in the marinade, rather sitting on top of the lemons and spices. If you do not use the marinade, then put a very small amount of water in the bottom of the pan.</p>
<p>Close the foil so the salmon is fully enclosed and put it all in the middle of the over. Let this cook for about thirty minutes. Depending on the thickness of the fillets, perhaps a little more or less. The salmon can be brought out and checked with ease, just be careful of the steam that escapes when you open the foil. Once done, the salmon can be arranged on a serving plate, with the lemon pieces lining the sides. This is a way of preparing salmon that pleases almost anyone. Have fun and enjoy.</p>

			<content:encoded><![CDATA[<p>A decanter is a container that is used to hold the decantation of a liquid &#8212; commonly used for wine &#8212; which may contain a residue called sediment. Decanters are usually used as serving containers for wine. Decanters can differ greatly in their design and form. They are usually made of a static material and will hold one standard bottle of wine at minimum. A <a href="http://www.decanter.com/" target="_blank">wine decanter</a> is very similar to the carafe which is used for serving wine and other drinks except a carafe is not supplied with a stopper. Decanters have played a considerable role in the serving of wine all through the entire history of wine.</p>
<p>The decanting process starts when a liquid is poured into the decanter in the hopes of separating the sediment from the liquid. In the process the sediment is left in the original container and the liquid free from sediment is relocated to the decanter. Decanters are used to serve wines that are overloaded with residue deposits in the original bottle. Residue could appear in the wine due to aging of the wine or from a wine-making process that does not include filtering or clarifying. More modern wine-making processes reduce the amount of sediment in wines as they age.</p>
<p>Another reason to decant wine is to aerate and freshen it. The decanter is thought to mimic the act of swirling wine in a glass. This movement triggers the wine to release aroma compounds. A decanter is thought to smooth out some of the harsh aspects of some wine thus improving the taste. Decanting a youthful wine &#8212; one with a small amount of sediment or no sediment at all &#8212; is effortless. Simply dispense the wine into the decanter and allow it sit for roughly half an hour before being served. Even over the small amount of time you will likely see a dramatic improvement in the taste. Decanting older wines will pose a bit more challenge and should be decanted immediately prior to being served. Over exposing an aged wine to oxygen may damage the wine as it has already aged on its own and does not need any enhancement. Very rarely you will find a young wine with sediment, when this happens be sure to follow the practice of decanting an older wine but allow an extended time period for the wine to breathe as well as develop.</p>
<p>Many people new to decanting wine will likely wonder what kinds of wine to decant and what kinds not to decant. The views on this are very diverse although many wine experts recommend decanting everything even white wines. Others will argue that white wines and most light fruity wines do not improve much from decanting. There are by no means rules set in stone on this controversial topic and even so, it will become a personal preference on what wines you decant and what wines you leave unaided. </p>

<p>Wine has been around for centuries, with the traditional method of making wine dating back thousands of years. Initially wine was made by simply allowing crushed grapes to ferment without the addition of any other ingredients, as the grapes themselves would ferment naturally over time to produce a fermented beverage which was alcoholic in composition. Though other fruits, such as apple, would also be used for making wine, grapes were the most common fruit used for creating wine, which was considered a fermented fruit juice.</p>

<p>Over time, the wine making process became modernized as society became more aware of the chemical composition of grapes and the wine making process itself. <p>Chardonnay is truly a love or hate relationship. For many the characteristic oaky taste is a favorite of Chardonnay as well as many white wines. Full-bodied, oak laden Chardonnay is not however the classic crisp and clean Chardonnay that many love. A very different taste. While both wines feature fruity tastes, the oaked style is heavier and has that more woody taste over the light clean and crisp style in the classic version.</p>

<p>Chardonnay grapes are not what brings about the difference in the wine, the <a href="http://www.homewinemaking.co.uk/" target="_blank">winemaking process</a> is what separates the tastes and the love it or hate it reactions. Chardonnay grapes are pure, clean, crisp and ripe. The process however can distort that crisp and clean taste. <p>The malolactic process, is a bacterial process that converts the malic acid into a softer creamier acid is a natural process, but is normally induced in winemaking, to adapt the wine. Winemakers as well as consumers like Chardonnay to have a almost creamy, buttery quality, and they achieve this with the malolactic process. As the fine is then fermented and processed the other flavors are produced. Many winemakers over use oak, just like over processing the grapes. The type of oak barrels used, their age, and make are what transfer the taste to the wine. While there are many wine drinkers who love the oaky woody taste, there are just as many who prefer the crisp, clean lighter classic version.</p>
<p>The reason that the wine industry has so many choices is because everyone has a different taste and a different love. So like everything else in the world of choices, wine will continue to be adapted. Chardonnay grapes will remain the same, crisp, wonderfully flavored and touched by the winemakers to create multiple varieties for every taste and wine lover.
